Crispy Aketta Spring Rolls


Light and refreshing, these scrumptious spring rolls work great as a healthy appetizer or snack! Including Cripsy Aketta adds an extra crunch and protein boost!


  • 1 cup miner’s lettuce

  • 1 tangerine

  • 1 sliced tomato

  • 4 rice paper wrappers

  • 1 cup crispy Aketta

  • 3 tbsp chili powder

  • 1/4 tbsp extra-virgin olive oil

  • 1 tbsp Himalayan sea salt


  1. Coat a cast iron skillet with the extra virgin olive oil; add 1 cup of crispy Aketta. Mingle and coat the Aketta in oil over medium heat. Shake the pan frequently so they don't burn.

  2. After 2-3 minutes, add the spice and salt until evenly coated, continue to slow pan-toast. Keep in mind you want to toast them to your desired crunch without burning the spice, this will take about 3-4 minutes. Set aside toasted Aketta in a bowl to cool.

  3. Prepare spring rolls by laying out four sheets of rice paper wrappers. For two of the wrappers, add ½ cup of miner’s lettuce and ½ tangerine on each. For the other two wrappers, add ½ cup kale and ½ the sliced tomato on each. Sprinkle ¼ cup of the toasted Aketta on each of the rolls.

  4. Fold the wrappers in half diagonally, then hold the filling and roll towards the corner of the wrapper to form the spring rolls. Fold the ends in on each side and dab a little bit of water to hold them in place.

  5. Serve with your favorite dip or enjoy alone!
