  • 1/2 head of cauliflower
  • 1 1/2 tablespoon of organic cacao powder
  • 1 tablespoon Aketta cricket flour
  • 1 tablespoons of Stevia powder (adjust measurement to your preferred sweetness)
  • 3 pitted Mejool dates
  • 1/2 cup nutmilk (you can also use coconut water if you prefer)
  • 1/8 piece of fresh vanilla

Steam the cauliflower. Set aside to cool. In a blender or Vitamix combine all the ingredients. Pulse, slowly add the nut milk or coconut water until you reach preferred consistency. Top with cacao nibs and enjoy this guilt free treat!

CHEF TIP: Low carbohydrate dieters can use cauliflower as a reasonable substitute for potatoes or rice; while they can produce a similar texture, or mouth feel, they lack the starch of the originals. Like certain legumes (including chickpeas), it can be turned into a flour from which such foods as pizza or biscuits are made.
